PIZZA STYLE STUFFED COURGETTES

So you want pizza but its a diet no well this goes a little way towards that craving make sure you weigh cheese so your not tempted to use to much but if your not on a diet make it cheessy fantastic

INGREDIENTS

Passata small glass
wine even smaller glass
peppers small bit of each
tomato 1
mushrooms 2
onions 1/4
pepperoni 2 slice
mozzerlla 15g
chedder cheese 10g
Courgette 

Scoop out the courgettes
I then cover these with boiling water and microwave for 3 mins to soften and cook
then add all the ingredients except cheese and pepperoni into a pan add small glass of water too then cook till all the ingredients have cooked and reduced
then pile the stuffing into the courgette press down so you get plenty in top with the cheese and pepperoni
then cook at around 200 c for 25 mins tell all nice and melty

and I insist on a parsley garnish

LOW FAT CHICKEN BURGER

INGREDIENTS

  • CHICKEN FILLETS  MINCED
  • DICED CHILLI
  • SWEETCORN RELISH
  • PARSLEY
  • LOW CAL MAYO
  • CRANBERRY SAUCE
  • GARLIC
  • PARMIGIANA CHEESE
Mix together to form burger shape



chill in the fridge to get firm
grill on each side the serve in a bun with salad chilli sauce a low cal mayo dip

LOW FAT CAULIFLOWER CURRY







INGREDIENTS

  • 5 CAULIFLOWER FLORETS
  • 1/2 CHILLI  KNOB OF GINGER
  • 2 CLOVES GARLIC
  • TEA SPOON CURRY POWDER
  • 3 TABLESPOON CREME FRACHIE 
  • SAME AGAIN OF WATER OR STOCK
  • I/2  ONION
  • 150MLS PASSATA
  • PARSLEY CORIANDER
METHOD
  1. FRY OF ONIONS GARLIC AND CHILLI
  2. ADD CURRY POWDER
  3. ADD STOCK CREME FRECHE AND PASSATA
  4. REDUCE THEN ADD IN COOKED CAULIFLOWER AND SOME MORE ONIONS
  5. YOU CAN ALSO ADD SOME SOYA SAUCE CHILLI 
  6. GARNISH WITH CORIANDER AND PARSLEY

LOW CALORIE CHICKEN CHASSEUR



INGREDIENTS (one portion)



  1. I/4 OF RED YELLOW &GREEN PEPPER
  2. 1/4 ONION
  3. 3 GARLIC GLOVES
  4. 3 MUSHROOMS
  5. 250ML PASSATA
  6. SMALL GLASS OF WINE
  7. PARSLEY
  8. MIXED HERBS
  9. CHICKEN BREAST
METHOD

  • Fry off onion garlic mushrooms and peppers in a little oil
  • Add passata wine and some water or stock
  • add herbs
  • reduce a little, then add in chicken breast to poach

LOW FAT BEEF STROGANOFF

serves one

 INGREDIENTS


  • 4 to 6oz frying rump or sirloin steak what ever your budget runs to 
  • butter oil for frying
  • half onion finely chopped
  • 4 mushrooms
  • 3 cloves of garlic
  • tea spoon wholegrain mustard
  • crème fraîche 150mls and same again of stock or water
  • shot of whisky or wine or sherry choose one !!!
  • chopped parsley or chives 
  • paprika to garnish 


Firstly seal beef my cooking in some oil or butter then take out and drain - set aside

  1. fry off onion garlic and mushrooms in a little oil or butter
  2. add crème fraîche  and stock along with mustard
  3. it will look quite liquid dont worry
  4. cook for about 10 mins to reduce and thicken
  5. add alcohol and some parsley or chives
  6. put beef beef back in briefly to heat through watch you dont overcook
  7. pour into nice serving dish and garnish

Bread or Rolls




TIMELINE




STAGE ONE
Empty packet into bowl and mix as directed on pack



STAGE 2
Knead the bread again as it says on pack I do it to music



Stage 4 put into a warm bowl (I put hot water into it while I am kneading then place over a jug of hot water and cover with bag and leave for a hour






STAGE 5 it will double in size its magic take out and briefly knead again



STAGE 6 Place into loaf tin and cover with bag again place over the bowl filled hot hot water again
STAGE 7 its ready for the oven preheat your oven





or if you want rolls go to stage 5

Divide into 10 small balls and place on a metal tray
place tray above bowl of hot water to rises and cook as directed



out of the oven ready to tear and share
